Chestnut Flour DDM 31/08/2026 Organic

What does chestnut flour taste like?

Mild and slightly sweet, more discreet than the beige colour of the flour suggests. The Kazidomi chestnut flour is 100% organic chestnut, with no other ingredient. It suits sweet preparations above all, where it brings an autumnal note you can pick out straight away.

Chestnut or almond flour for baking?

The Kazidomi chestnut is starchy and sweet on its own, thickens a batter and works in pancakes, cakes and shortcrust pastry. Almond flour is fatty, more of a nut, and gives a moist result. The first gives the recipe structure, the second softens it, and many recipes use both.

Does it contain gluten?

The chestnut carries none by nature. The Kazidomi sheet does state, however, that this flour may contain traces of gluten, soya and mustard from the production line. A coeliac should therefore check the pack before use. With no gluten, the flour will not raise a bread dough on its own.

In what proportion should I use it?

Rarely on its own, because its sweetness and its tight texture take over quickly. With the Kazidomi chestnut flour, a third of the total flour weight is enough to mark a batter for pancakes, waffles, muffins or bread. The rest can be a cereal flour or another gluten-free one.

Where is it from and how do I keep it?

The Kazidomi supplier is based in south-west France and works with growers from that region. The bag holds 500 g. It keeps away from heat and damp, resealed or tipped into a jar, because this flour clumps readily in a humid cupboard.
