Whole Cane Sugar in Bulk Organic

What does an unrefined sugar bring?

Whole cane sugar keeps its molasses: a dark brown colour, a slightly damp texture and a pronounced caramel taste, close to liquorice. Kazidomi Vrac sells it by weight, in a one-kilo bag, with a single ingredient, organically farmed cane sugar.

How is it used in baking?

Like a brown sugar, bearing in mind that it darkens the batter and scents the whole recipe. Kazidomi Vrac whole sugar suits gingerbread, cookies, crumbles and marinades. For a pale sponge, a blond sugar will give a more neutral result.

Whole cane sugar or coconut sugar?

Both are brown and fragrant. Kazidomi Vrac whole sugar comes from cane, with a marked liquorice note and a slightly damp texture. Coconut sugar, drawn from the sap of the coconut palm, leans more towards caramel and has larger crystals.

Why does it form lumps?

Because it still holds molasses, and therefore a little moisture: the crystals clump naturally as they sit. That is no sign of anything wrong. The Kazidomi Vrac sugar breaks up with a fork, or goes briefly in a blender to get a fine powder back before use.

Where does this sugar come from?

From Ecuador, under organic farming. The process stops at extracting the cane juice and drying it, with no refining and no bleaching stage. Kazidomi Vrac offers it by weight, in a one-kilo bag to be tipped afterwards into an airtight container.
