Chocolate Chips (60%) in Bulk Organic

Do the chips keep their shape in the oven?

They are real 60% chocolate chips rather than a coating, so they soften in the heat and set again as they cool. To keep them clearly drawn in a cookie, fold the Kazidomi Vrac chips into cold dough, get the tray straight into a hot oven and bake it quickly.

Chocolate chips or dark chocolate drops: which do I need?

Chips are small, so they scatter through a cookie or muffin batter without any chopping. The larger, flatter dark chocolate drops sold loose by Kazidomi Vrac are made for melting into a ganache, a coating or a mould. Same shelf, two different jobs, and the cocoa content differs as well.

What goes into these chips?

Cocoa mass, cane sugar, cocoa butter and vanilla extract, all from organic farming. The chocolate is Belgian, at 60% cocoa, and the bean comes from Peru. Vanilla is what gives the Kazidomi Vrac chips their rounded note behind the bitterness. The bag holds 500 g, sold loose by weight.

Can I melt them like a bar?

Yes, over a bain-marie or in short bursts in the microwave, stirring often. Because they are small they melt fast, so the heat has to come off early or the chocolate seizes. Melted, the Kazidomi Vrac chips will coat a cake, line a mould or go into a hot chocolate.

How do I stop them clumping together?

Keep them in a closed jar, dry, at a steady room temperature and away from an oven or a sunny window. Warmth softens the cocoa butter and welds the Kazidomi Vrac chips into a block. Tipping the 500 g bag into an airtight tub also makes them easier to spoon out.
