How is this powder made?

The cocoa beans are fermented, dried in the sun and then milled. The Kazidomi 200 g bag holds nothing but raw cocoa powder: no sugar, no flavouring and no flavour enhancer. The cocoa is grown organically in Peru. Nothing sweetens it, so what you taste comes entirely from the bean.

What does raw cocoa taste like?

Very bitter and strongly cocoa, without the roundness of a sweetened drinking chocolate. The Kazidomi powder therefore needs a banana, a date, a syrup or a plant milk behind it if you drink it on its own. In baking it deepens the taste of a chocolate cake.

Raw cocoa powder or sweetened drinking chocolate: what changes?

The Kazidomi raw cocoa is the milled bean and nothing else: no sugar, no milk powder, no flavouring. A sweetened drinking chocolate is mostly sugar. The quantities are not interchangeable, so a recipe written for one has to be adjusted before you make it with the other.

What can I stir it into?

A smoothie, a yoghurt, a porridge, a hot plant milk, a cake batter, energy balls or a granola. The Kazidomi powder disperses better in a warm liquid than in a cold one, and the amount per serving is printed on the 200 g bag.

Why does it go lumpy?

Because cocoa powder is fatty: it floats on a cold liquid and sticks to itself. Mix it first with a little of the liquid into a smooth paste, then pour in the rest, and the problem goes away. For baking, the Kazidomi powder is worth sifting before it meets the flour.
