What is in a bag of Kazidomi Vrac dried apricots?

One ingredient: organic apricots, stoned and dried whole. Kazidomi Vrac adds no sugar, no syrup and no preservative, so the sweetness is entirely the fruit's own, concentrated as the water leaves it. That concentration puts the sugars at 57 g per 100 g. The fruit is sold loose by weight, in a 500 g bag.

Dried apricots or fresh apricots: which suits a recipe better?

Drying pulls the water out and concentrates the sugar, so the Kazidomi Vrac fruit tastes rounder and firmer than a fresh apricot and holds for months rather than days. In a tagine, a stuffing or a granola it keeps its shape and releases no juice. A fresh apricot is the one to reach for when you want that juice.

Why has a white bloom appeared on the surface?

That is the fruit's own sugar migrating outwards as the apricots dry a little further, not mould and not a sign that the bag has turned. Kazidomi Vrac applies no coating and no anti-caking agent, so nothing else could form there. The apricots stay perfectly good; wipe them or simply use them as they are.

How do I store them once the bag is open?

Somewhere cool, dry and out of the light, in a glass jar or an airtight tin. Kazidomi Vrac recommends that because contact with air hardens the flesh. If they have already gone stiff, a few minutes in lukewarm water brings the softness back before you chop them or add them to a dish.

How do I use them day to day?

Straight from the jar as a snack, sliced into porridge, muesli or a grain salad, blended to a paste for homemade bars. The Kazidomi Vrac apricots also hold up to cooking in a savoury dish with lamb or chicken. Rehydrated in lukewarm water they go into a compote or a fruit sauce.
