What is in this 750 ml bottle?

Fermented tea and plant extracts at 94.5%, built on mineral water, green tea, black tea, maté, lime blossom, lemon verbena, cornflower, melissa, spearmint, nettle, woodruff, elderflower, raspberry leaf, calendula, mulberry and liquorice. Then raw cane sugar at 2%, lime juice at 2%, ginger juice at 1.5% and a kombucha culture. Kazidomi has it made in Germany.

Lime and ginger or passion fruit and lemon in the 750 ml bottle?

Both Kazidomi family bottles share the same fermented tea and plant base. Lime and ginger is the sharper one, citrus in front with a warm finish from the rhizome. Passion fruit and lemon carries 4% passion fruit juice, rounder and more tropical, with no heat at the end.

Is this kombucha very sweet?

The recipe holds only two per cent raw cane sugar, part of it consumed by the kombucha culture during fermentation. What comes out is a tangy drink marked by lime and ginger, a long way from the profile of a soft drink. Kazidomi adds no sweetener and no synthetic flavouring.

What does pasteurised mean on the label?

That fermentation was stopped before bottling. This Kazidomi kombucha therefore does not carry on developing on the shelf: its pressure, its acidity and its taste stay stable until it is opened, and it needs no refrigeration while the 750 ml bottle is still sealed.

How long do I keep it once opened?

Five days in the fridge, with the cap closed firmly: that is what Kazidomi gives on this large format, which holds more than twice the individual 330 ml bottle. The drink stays fine after that but loses its fizz. Sealed, it keeps in a cool dry spot out of the sun.
