Smooth or crunchy peanut butter?

Both Kazidomi versions share the same ingredients list: roasted peanuts, nothing else. Only the texture changes. The smooth one is ground fine, spreads without tearing a slice of bread and blends into a sauce. The crunchy keeps whole pieces, which show up more on toast or in porridge.

What is in this jar of peanut butter?

Roasted peanuts from organic farming, at 100%. The Kazidomi jar has no added sugar, no palm oil, no salt and no preservative: the list stops at the peanut. The label warns of possible traces of hazelnut, cashew, almond and peanut linked to the workshop.

Why does a layer of oil form on top?

Because there is only peanut in the jar. With no emulsifier and no added oil, the fat of the nut rises as it stands. Stir the Kazidomi jar from the bottom up with a long thin blade before the first use, then close it again; the texture evens out and stays that way.

Does the jar need to go in the fridge?

Not necessarily. The Kazidomi jar keeps in a cool, dry cupboard, out of the light and properly closed. The fridge slows the oil rising but hardens the paste, which then spreads badly. A sharp smell means the fat has gone rancid: that is the one thing worth watching.

How do I cook with it?

On toast, in porridge, in a smoothie or a yoghurt. Kazidomi peanut butter also belongs in savoury cooking: satay sauce, marinades, Asian soups, where it binds the liquid. A tablespoon is enough to flavour a sauce, and the 500 g jar covers several weeks of regular use.
