What does cashew purée taste like?

Mild, creamy, barely sweet, with the roasted note the nuts pick up in the oven. It is one of the roundest nut purées in the Kazidomi range, with no bitterness and no tannin. The pale colour and quiet flavour let it slip into sweet and savoury cooking alike.

Cashew purée or tahini for a sauce?

The Kazidomi cashew makes a soft, unctuous sauce, almost milky, which suits roast vegetables and creamy dishes. Tahini, made from whole sesame seeds, brings bitterness and a much stronger taste instead, and it is what a houmous needs. Two quite different registers.

What is in this 250 g jar?

Roasted cashew nuts from organic farming, and that is the whole list. Kazidomi adds no additive, no preservative, no oil and no sugar. The purée is simply ground from the roasted nuts, which explains the thick texture and the fact that a little fat can rise while the jar stands.

Which recipes does it go into?

Spread on bread, stirred into a smoothie or a porridge, loosened with water and lemon for a sauce, or folded into a plant-based dessert cream. Kazidomi also points to savoury use, where it thickens a curry or a soup without changing the colour of the dish.

Does it need to go in the fridge?

No. The Kazidomi jar keeps at room temperature, out of the light, closed properly after each use. Cold makes the purée hard and awkward to scoop. Stir before using to work back in the oil that has risen to the top, which is normal with no emulsifier in the recipe.
